MEXICAN FIESTA CASSEROLE 
15 oz. raw ground turkey
2 c. tomato sauce
1/2 c. chopped green pepper
1/2 c. chopped onion
1 c. water
6 oz. shredded cheddar cheese
1 minced garlic clove
1 can diced green chilies
2 tsp. beef bouillon
1 c. corn
2 c. cooked rice
1 tsp. cumin
1 tsp. chili powder

Brown turkey, garlic, onion, green pepper and bouillon until brown. Add chilies, cumin, chili powder, tomato sauce, water, corn, and rice. Pour in a 9 x 13 dish. Top with cheese. Bake 350 degrees until cheese melts. Serves 6. Each serving: 3 proteins, 2 vegetables, 1 bread, 5 optional calories.
