MEXICAN FIESTA CORN 
2 eggs
1 c. yellow cornmeal
1 can cream style corn
1/2 c. chopped onion
1/4 c. milk
1/3 c. melted butter
1/2 tsp. baking soda
1 tsp. salt
1/2 lb. shredded cheddar cheese
1 sm. can green chilies

Preheat oven to 350 degrees. Beat eggs in medium bowl; stir in cornmeal. Add corn, onion, milk, butter, baking soda and salt. Grease 1 1/2 quart casserole dish. Place 1/2 the corn mix in dish. Add half the cheese and the chilies. Add remaining corn mix. Top with remaining cheese. Bake at 350 degrees for 45 minutes.
