FIESTA CORN SALAD 
1 med. onion, cut in 1/2 inch wedges
2 med. red peppers, cut in 1/2 inch strips
1/2 lb. green beans, cut in 1 1/2 inch pieces
2 tbsp. olive oil
3 med. cloves garlic, crushed
2 pkgs. (1 lb. each) frozen corn niblets, partially thawed, 6 c.
1 can (4 oz.) whole green chili peppers, drained and cut 1/4 inch strips
1 tsp. dried basil leaves
1/2 tsp. salt
1/8 tsp. pepper
(Curly lettuce, optional)

Mix in large skillet on medium heat saute onions, red pepper and green beans 3 minutes in hot oil. Stir in garlic; cook 1 minute. Add corn, chili pepper, basil, salt and pepper. Simmer covered 5 minutes or until green beans are tender. Serve warm or chill and serve on lettuce. 16 servings.
