ITALIAN CHICKEN 
1 lb. skinned & boned chicken or turkey breasts, cut into serving pieces
2 tbsp. evaporated skimmed milk
2 c. "Progresso" Italian seasoned bread crumbs (or as much as needed to coat chicken)

Dip chicken in milk and then in bread crumb mixture to coat. Place in a nonstick baking pan. Sprinkle evenly with any remaining crumbs and milk. Bake at 400 degrees for 15 to 20 minutes or until chicken is tender.

Place a 1 ounce slice of Mozzarella cheese on each breast and bake until cheese melts. Serve the chicken breast on top of a 1/4 cup of "Progresso" tomato sauce.
