PEANUT BUTTER COOKIES 
2 c. self-rising flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. shortening
1/2 c. sugar
1/2 c. brown sugar
1/2 c. plain or crunchy peanut butter
1/2 tsp. vanilla
1 egg

Heat oven to 375°F. Stir flour, soda and salt. Cream shortening, sugar and peanut butter. Beat in vanilla and egg. Blend into flour mixture to make a smooth dough. Form into 1-inch balls. Place on ungreased cookie sheet 2-inches apart. Flatten dough balls by making crisscross fork patterns.

Bake at 375°F about 10 minutes.

Makes about 5 dozen.
