FRESH VEGETABLE MEDLEY | |
1 c. water 2 tbsp. butter 1/2 tsp. salt 1/4 tsp. white pepper 1/8 tsp. garlic powder 3 med. carrots, sliced diagonally 2 med. green pepper, cut in 1 inch pieces 1 lg. onion, cut in 8 wedges 2 med. yellow squash 2 med. zucchini 1 lb. fresh mushrooms, sliced 1 c. cheddar cheese Combine water, butter, salt, pepper and garlic in large pot. Bring to boil. Add carrots. Cover and simmer for 5 minutes. Add green peppers, onion and squashes. Cover and simmer for 10 minutes more. Stir in mushrooms. Cover and simmer for another 5 minutes. Drain well. Place vegetables in a lightly greased 13x9x2 inch casserole dish. Sprinkle with cheese, broil until cheese melts. |
