WHOOPIE PIES 
1/2 c. butter, softened
1 c. sugar
1 egg
2 c. all purpose flour
1 1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. cocoa
1/2 c. milk
1 tsp. vanilla

Cream butter and sugar, beating until light and fluffy. Add egg. Combine flour, soda, baking powder, salt and cocoa. Add to creamed mixture alternately with milk. Add vanilla; mix well. Drop dough by teaspoon onto greased cookie sheet. Bake at 400 degrees for 8 minutes. Cool on wire racks.

COCONUT CREAM FILLING:

1/2 c. butter, softened
1 c. sifted powdered sugar
1 c. flaked coconut
1 (7 oz.) jar marshmallow creme
1/2 c. chopped pecans
1 tsp. vanilla

Mix until smooth. Spread on bottom side of half the cookies. Place remaining cookies, bottom side down on top of filling.
