POTTED MEATBALLS AND VEGETABLES 
2 lbs. ground beef
2 eggs, slightly beaten
3/4 c. bread crumbs
1 tsp. salt
1/8 tsp. pepper
1/4 c. tomato juice
12 tiny potatoes or 4 med. ones, quartered
6 carrots, halved lengthwise
2 stalks celery, sliced
1 lg. onion, minced
1/4 tsp. garlic powder
1 tsp. salt
1 can tomato and mushroom sauce
3/4 c. water

Mix meat with eggs, bread crumbs, salt, pepper and tomato juice. Shape into medium sized meatballs. Place potatoes, carrots, celery, and onion in large saucepan. Put meatballs on top. Add garlic powder, salt, tomato and mushroom sauce and water. Bring to a boil; cover, reduce heat and simmer 1 hour. Add more water if necessary. Yield: 6-8 servings.
