PASTA WITH CHICKEN AND TRICOLOR
PEPPERS
 
2 tbsp. olive oil
1/2 each red, yellow, green peppers, sliced into 1/8 inch strips
1 scallion or green onion, cut into thin diagonals
2 or 3 boneless, skinless chicken breast, cut into bite size pieces
1 tbsp. fresh thyme, OR 1/4 tsp. dried
12 oz. mostacoli OR ziti (pasta)
2 tbsp. lemon juice
1 tbsp. thinly sliced green scallion or onion tops
Fresh Parmesan cheese

Cook pasta according to package directions. Stir fry pepper and scallions 2 minutes in oil. Add chicken and sprinkle with 1/2 the thyme and pepper to taste. Cover and cook over low heat for 5 minutes. Toss chicken and peppers with pasta, lemon, scallion tops and thyme. Serve with Parmesan cheese.
