LEMON COOKIES 
4 1/2 c. flour
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt
2 sticks butter
1 c. powdered sugar
1 c. sugar
2 eggs
1 c. oil
1 tsp. lemon flavoring
1/2 tsp. vanilla
1 tsp. lemon rind

Combine flour, soda, cream of tartar and salt. Cream butter and sugar. Beat in eggs, one at a time. Add oil flavoring, and lemon peel. Gradually add dry ingredients. Chill. Form in rolls and slice or use cookie press. Bake at 325 degrees for 8 to 10 minutes. May glaze with powdered sugar, lemon juice and butter, if desired.
