ZUCCHINI ROUNDS 
1/3 c. biscuit mix
1/8 tsp. pepper
2 c. grated unpeeled zucchini squash
1/2 med. onion, grated
1/4 c. grated cheddar cheese
2 slightly beaten eggs
2 tbsp. butter or oil

In mixing bowl, stir together biscuit mix, cheese, pepper and onion. Stir in beaten eggs just until mixture is moistened. Fold in zucchini. In 10 inch skillet, melt butter or oil and drop mixture by tablespoonfuls, fry about 2 or 3 minutes on each side or until brown.
