NOODLE PUDDING | |
4 eggs, beaten 1/2 c. sugar 1 tsp. grated lemon rind 1 tsp. lemon juice 8 oz. pkg. wide noodles 2 c. finely chopped apples 1 c. cottage cheese 1 c. sour cream 1/2 c. raisins 1/2 c. butter, melted 1 tsp. cinnamon 1/2 tsp. nutmeg Stir together eggs, sugar, lemon rind and juice. Cook noodles 5 minutes; drain. Return noodles to pot after draining. Stir remaining ingredients into noodles, adding beaten eggs last, toss to coat well. Pour into greased 11 x 7 x 2 inch pan. Bake at 350 degrees for 50 minutes or until top is brown and center is set. Serves 8. |
