LOCHEN KUGEL (NOODLE PUDDING) 
8 oz. cooked (med.) noodles
3 eggs, separated
(I use 1/2 c. egg beaters and 1 egg, separated
1 c. (1/2 pt.) sour cream (I use lo-fat)
1 tbsp. vanilla
1# cottage cheese (I use 1%)
1 c. sugar
1/2 stick (4 tbsp.) melted butter
1/2 tsp. cinnamon (optional)
1/2 c. white raisins (optional)

Beat yolks; add sugar. Mix well. Add sour cream, cottage cheese and vanilla. Add melted butter (raisins and cinnamon.) Pour into cooked noodles. Fold in beaten egg whites. Pour into Pam sprayed pan and add topping.

TOPPING:

2 c. Rice Krispies
1/2 stick butter
1/2 c. granulated sugar
Cinnamon, if desired

Mix and crunch together all ingredients (with hands or chopper). Spread on pudding and bake at 350 degrees in 7 x 11 inch or 8 x 8 inch pan for 1 to 1 1/2 hours. Enjoy!
