BANANA BREAD | |
1 lb. very ripe bananas (weigh with peels off; about 8 sm. 4 inch bananas make a pound; or 4 med.-sized ones) 2 c. sugar 7 tsp. baking soda 1/4 tsp. salt 3 c. flour 4 eggs 1/2 c. vegetable oil 1 c. buttermilk Place a rack in the middle of the oven and preheat it to 275 degrees. Prepare the loaf tins (8 x 4 x 3 inches). Line them completely with buttered parchment paper. Combine the peeled, sliced bananas, sugar, baking soda and salt in the bowl of an electric blender and blend on high speed for a minute. Scrape down the sides to be sure the mixture is well blended. Pour the mixture into a large mixing bowl and add the eggs one by one, beating well after each addition. Then, add the flour gradually. Last, add the oil and buttermilk. Beat the mixture for 2 minutes, or until smooth and well blended. Makes 2 loaves. |
