SALAD ORIENTALE 
8 c. spinach or salad greens
1 c. sliced water chestnuts
4 scallions
1 c. sliced mushrooms
1 can (3 oz.) chow mein noodles
2 tbsp. parsley (finely chopped)
1 c. bean sprouts (trimmed)
1/2 red or green pepper (diced)
1/2 c. slivered almonds
1 can (11 oz.) mandarin oranges (optional)
1/4 lb. chicken breast in 1/2 inch cubes (optional)

Combine all ingredients except noodles in large bowl. Toss with salad dressing. Sprinkle chow mein noodles on top.

SALAD DRESSING:

3 tbsp. soy sauce
3 tbsp. cider vinegar
2 tbsp. white wine
1 tsp. lemon juice
1/4 tsp. prepared mustard
1/4 tsp. garlic powder
Salt and pepper to taste

Shake all ingredients together in covered jar.
