FUNNEL CAKES 
Vegetable oil
1 1/3 c. milk
2 1/2 c. self rising flour
2 eggs
1/4 c. sugar
Confectioners sugar

Heat oil (2 inches) to 375 degrees in a three quart saucepan. Beat remaining ingredients except confectioners sugar until smooth. Holding forefinger over end of funnel (tip of funnel should be 1/2 inch in diameter), pour about 1/2 cup batter into funnel. Drip batter, controlling flow with finger, into the hot oil, swirling it into circles from the center out. Fry until light brown and then turn and fry other side. Sprinkle with confectioners sugar.
