FUNNEL CAKES 
2 eggs, beaten
1 1/2 c. milk
2 c. flour, sifted
1 tsp. baking powder
1/2 tsp. salt
2 c. cooking oil

Combine eggs and milk. Sift together flour, baking powder, and salt; add to above. Heat oil to 360 degrees. Add more milk if too thick and more flour if too thin.

Place batter in funnel with 3/8 inch opening, holding finger over end. Starting in the center and with a circular motion, drop the batter into 2 inches of fat (electric frying pan works well). Fry until puffy and brown. Turn once with a slotted spoon. Place on paper towel to drain. Sprinkle with confectioners' sugar.
