OATMEAL REFRIGERATOR COOKIES 
1 c. shortening
1 c. sugar
1 c. firmly packed brown sugar
2 eggs, beaten
3 c. quick oats
2 tsp. vanilla
1 1/2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt

Cream together shortening and sugars until light and fluffy. Add eggs one at a time, beating well after each addition. Blend in vanilla.

Sift together flour, baking soda and salt. Gradually add dry ingredients to creamed mixture; mix well. Stir in oats.

Divide dough in thirds. Shape into 10 x 1 1/4 inch rolls. Wrap tightly in plastic wrap or waxed paper. Chill several hours or overnight.

Cut rolls in thin slices. Place about 1 1/2 inches apart on ungreased baking sheets. Bake in 400 degree oven 6-8 minutes or until done. Remove from sheets, cool on racks. Makes about 8 dozen.
