COCONUT OATMEAL REFRIGERATOR
COOKIES
 
1 1/2 c. sifted flour
1 tsp. baking soda
1 tsp. salt
1 c. butter
1 c. firmly packed brown sugar
1 c. sugar
2 eggs
3 c. quick cooking rolled oats
1/2 c. chopped pecans
1 1/3 c. coconut

Measure flour, add soda and salt; sift together. Cream butter, add sugars and cream until light. Add eggs and beat well. Add flour and mix thoroughly; add oats. Stir in nuts and coconut. Divide into 3 parts. Shape into 2" rolls. Chill until firm or overnight. Before slicing, let stand 1/2 hour. Make 1/2" slices. Bake in ungreased pan at 375 degrees about 10 minutes.

This recipe works well also to drop cookie dough by teaspoonfuls.
