MOM'S APPLE CAKE 
2 c. white sugar
2 1/2 c. flour
1/2 c. oil or butter
2 eggs
1 tbsp. cinnamon
1 tsp. baking soda
2 tsp. baking powder
1 tbsp. vanilla
4 c. apples, drained (or 2 cans Comstock apple pie slices)
1 c. pecans
1 (6 oz.) bag butterscotch chips
1 tsp. salt

Mix first eight ingredients together. When well blended, add in apples and pecans. Place in greased dish and sprinkle with butterscotch chips. Bake at 350 degrees for 55 minutes. Makes two 8 x 13 inch (one to keep and one to share) or one 10 x 10 inch just for you!
