POTATO - BACON SOUP 
8 slices bacon, chopped
1 c. onion, chopped
2 1/2 c. potatoes, cubed
1 can cream of chicken soup
1 c. sour cream
2 c. milk
Salt (to taste)
Pepper (to taste)

Fry bacon until crisp. Add onion and saute 2 to 3 minutes. Drain. Cook potatoes in 1 cup water for 10 to 15 minutes. Stir in soup, sour cream, bacon and onions. Add milk gradually, stirring constantly. Add salt and pepper. Heat to serving temperature. DO NOT BOIL.

This soup was a big hit with the family at dinner tonight. The sour cream is an important ingredient. Almost did without it, but glad we made the stop at the store to add it. Also, I was very careful not to add too much salt as the canned cream of chicken and bacon already pack a punch.

Love this recipe! As others have stated, so easy...I tweak it a bit by adding garlic, celery and sausage along w/ the bacon and onion. Today I added a couple teaspoons of hot curry too....yum Good winter dish.

So easy. I doubled the recipe and used 1 cup milk and 1 cup heavy cream. Stir in that mixture slowly and guarantee better than any soup you will taste. My family loved it.
