STEW MEAT AND RICE | |
Hope you like this recipe, my mother used to make it for us, and I love it! stew meat (I use one pound, but it doubles and quadruples easily) 1/2-1 cup all-purpose flour salt and pepper, to taste rice (read package for serving size) vegetables, to taste (I add none) oil (not required, a splash helps) Put flour in a baggie with salt and pepper. Add the stew meat and shake to coat. Let the meat brown in a small amount of oil or non-stick cooking spray (Pam). Pour water over the meat, make sure there is always a small amount of water in it, and let it simmer for 45-90 minutes. Note: The meat cooks very quickly but the longer you let it sit the more tender the meat becomes. After the meat is done the flour will have created its own gravy. Pour mixture over prepared rice, or serve next to it. You can add your favorite vegetables such as corn or peas to taste. Submitted by: Mrs. Cole Shackelton |
