WHEAT ROLLS 
2 c. water
1 tbsp. oil
1/3 c. cracked wheat
1 (2 oz.) pkg. fresh yeast
1 c. cottage cheese
2 tsp. salt
3 c. whole wheat flour
2 c. flour

Heat the water; add the oil and bring to boil. Pour over cracked wheat and cool until lukewarm. Add yeast and stir until it is dissolved.

Add cheese, salt, wheat flour and most of the white flour. Mix and let rise, covered, in a warm place for 1 hour.

Put onto floured surface and knead until dough is smooth and elastic. Divide into 20 pieces and roll each into a ball shape. Put on baking sheet and cover with towel until double in size.

Set oven to 425 degrees. Baste with water and sprinkle a little whole wheat flour on each roll. Bake 15 minutes or until done.
