DATE-NUT MUFFINS 
1 (8 oz.) pkg. dates, chopped
3/4 c. boiling water
1/4 c. corn oil
1/2 tsp. vanilla
1/4 c. chopped nuts
1 c. unsifted flour
1/2 c. unsifted whole wheat flour
1/2 c. sugar
1/2 tsp. baking soda
Speck of salt

Combine chopped dates with boiling water, corn oil and vanilla. In separate bowl, combine flours, sugar, soda and nuts and fold into date mixture. Stir just until flour mixture is moistened. Spoon into 12 muffin papers. Bake at 375 degrees for 25 minutes.

NOTE: A good recipe for one who wants to avoid eggs.
