DATE - NUT MUFFINS 
1 (8 oz.) pkg. pitted dates, coarsely chopped
3/4 c. boiling water
1/4 c. corn oil
1/2 tsp. vanilla
1 c. flour
1/2 c. whole wheat flour
1/2 c. sugar
1/3 c. walnuts, coarsely chopped
1/2 tsp. baking soda

Combine dates, water, oil, vanilla in a large bowl; stir to mix. Mix flours, sugar, walnuts, baking soda in medium bowl. Add to date mixture; stir until moistened. Spoon into 12 greased muffin tin cups. Bake in preheated 375 degree oven until tops are golden brown and firm to the touch, about 25 minutes. Immediately remove from pan. Serve warm or cold.
