PUMPKIN MUFFINS WITH DATES AND
WALNUTS
 
1 3/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. allspice
Pinch of salt
3/4 c. canned pumpkin
1/2 c. regular oil
1/3 c. molasses
1/3 c. milk
1 lg. egg
1/2 c. chopped walnuts
1/2 c. chopped dates

Preheat oven to 400 degrees. Line 12 (1/2 cup) muffin cups. Sift first 6 ingredients into medium bowl. Whisk pumpkin, oil, molasses, milk and egg. Stir in dry ingredients. Mix in walnuts and dates. Divide into muffin cups.

TOPPING:

1/4 c. brown sugar
1/4 c. flour
1/4 c. chopped walnuts
3 tbsp. vegetable oil
1/2 tsp. cinnamon

Combine all ingredients in small bowl. Sprinkle over muffins. Bake for about 20 minutes. Serve warm or at room temperature.
