DATE FILLED COOKIES 
FILLING:

1 1/2 c. dates, cut up
1 c. water
1/2 c. sugar
1 1/2 tbsp. flour or rice flour

Cook until thickened.

COOKIE BATTER:

1 c. shortening
2 c. brown sugar
2 eggs
1 1/2 tsp. baking soda
1/2 c. cold water
3 1/4 c. flour or 2 1/4 c. rice flour plus 1/2 c. sweet rice flour
1 tsp. vanilla
