RAINBOW COOKIES 
1/2 c. butter
1/2 c. powdered sugar
1/2 tsp. vanilla
1/2 tsp. almond extract
1 c. all-purpose flour
1/4 tsp. salt

In small bowl, cream butter, sugar, vanilla and almond extract until light and fluffy. Stir in flour and salt. Divide dough into 4 equal parts (about 1/2 cup each). Set aside 1 portion of dough. Tint each portion of the remaining dough pink, green and yellow with a few drops of food coloring. Shape each piece of dough into a 14 inch long rope. Place the 4 ropes of dough together to form 1 long roll of dough. Wrap tightly. Chill 2-3 hours.

Heat oven to 375 degrees. Cut dough into 1/8 inch thick slices. Place on ungreased cookie sheet. Bake at 375 degrees for 5-7 minutes or until cookies are set but not browned. Cool 5 1/2-6 dozen cookies.
