1 (12 oz.) pkg. chocolate chips 2 c. powdered sugar 2 eggs, beaten 4 tbsp. butter 1 tsp. vanilla 1 (10 1/2 oz.) pkg. sm. colored marshmallows Melt chocolate chips in double boiler with butter. Take off stove and add the 2 beaten eggs and 2 cups powdered sugar and vanilla. Fold in marshmallows. Have ready 4 sheets of waxed paper. Lay the pieces out flat. Drop chocolate mixture in 4 blobs on the individual papers which have been sprinkled with coconut and or chopped nuts if you wish. If you do this, it will take about 1 cup of walnuts and about 1 cup of coconut. It is delicious without. Using the wax paper, shape the blobs into long rolls and roll the waxed paper around them. Place in the refrigerator until you wish to slice and eat (at least 2 hours). |
