2 c. grated raw white potatoes 2 tbsp. onion, chopped 2 tsp. salt 2 tbsp. flour 2 eggs 1 tsp. pepper Beat the eggs and add other ingredients. Mix thoroughly. Drop from spoon into hot fat. Brown well on both sides. Serves 4. I omit the onion. | |

Only changes that I'd suggest is to pat dry your grated potatoes, I goofed on that step, batter was a bit thin but still tasty. The onions added a nice zip. Next time I may add a chopped jalapeno to them for an extra kick.
