ZUCCHINI CREOLE | |
2 c. diced zucchini 2 lg. tomatoes, peeled and chopped or 1 (8 oz.) can tomatoes 2 ribs celery, chopped 1 med. green pepper, chopped 1 lg. onion, chopped 2 tbsp. olive oil 4 tsp. rice 1/8 tsp. sage 1 clove garlic, mashed 3 tsp. parsley 1/4 tsp. nutmeg 1/4 tsp. Worcestershire sauce 1/2 tsp. salt and pepper Mix all ingredients in a large saucepan. Simmer over low heat about 15 minutes or until vegetables are tender. Good as a side dish or over rice. |
