“CREAMED CHIPPED BEEF” IS IN:
NEXT RECIPE:  CROCK POT CORNED BEEF

CREAMED CHIPPED BEEF 
1/4 cup (1/2 stick) butter
1/4 cup all-purpose flour
dash pepper
2 cups milk
2 1/2 oz. sliced dried beef

In medium saucepan, melt butter. Blend in flour and pepper. Stir in milk. Cook over medium heat until mixture boils and thickens, stirring constantly. Reduce heat. Tear beef into shreds; add to cream sauce and heat through. Serve over toast points or mashed potatoes.

I too remember this recipe my mom would fix..! Passed it down to our kids and learn to make it with scrambled eggs mixed in the sauce topped with some cheddar cheese... also would use tuna fish ! Just as delicious ! Thanks for sharing your memories... enjoyed reading them

My mom made this for us 9 kids and Dad about once a week because it was cheap and it filled you up. She also called it SOS but I did not know that came from the military! Interesting!!! We had it for "supper".

My army experience was that the military version of this dish was made with hamburger. The use of the more expensive dried beef is a somewhat more "ritzy" way of making this wonderful breakfast fare. I still make it using ground beef. Just brown the meat and proceed as per the recipe herein. I also make it with dried beef as that is the way the wife prefers it. I usually use Armor dried beef as it is widely available in supermarkets, but sometimes it can be found in a delicatessan by the pound.

This was the easiest and the best creamed chipped beef I've ever had. I used white pepper in the recipe. I don't like black dots in my white sauce.

I used fried ham instead of dried beef, and ended up adding a bunch more milk and a little salt. Served it over biscuits. My family loved it!

I brown the dried beef in the butter then add the flour and milk. I also add 2 beef bouillon cubes when I brown the dried beef, and a few shakes of Worcestershire sauce and just before serving I add sour cream and cook it long enough to take the chill off. My family loves it this way and it gives it that extra added flavor!!

I always enjoy having Creamed Chipped Beef aka "SOS" for breakfast but also periodically make it for a quick supper.
