FRESH APPLE COFFEE CAKE 
1 c. flour
1/2 tsp. salt
3/4 lb. golden delicious apples (peeled, cored and diced)
1 c. sugar
1/4 c. vegetable oil
1/4 tsp. nutmeg
1 tsp. baking soda
1 egg
1/2 c. chopped walnuts
1 tsp. cinnamon

Preheat oven to 300°F.

Grease 8 inch square baking pan. Sift flour, baking soda and salt into small bowl. Toss apples with egg in large bowl. Mix in sugar, nuts, oil, cinnamon and nutmeg. Add dry ingredients and then stir until just combined. Spread batter in prepared pan. Bake 40 to 45 minutes. Cool in pan for 10 minutes and cut into squares.

Been making this for over 25 years, from the R.S.V.P. section of Bon Appetit. Ridiculously good, rich, moist. Batter will be VERY thick, you'll have to spread it into the pan.
