CHINESE CHICKEN SALAD 
2 lg. chicken breasts, cooked and shredded
Shredded lettuce
Maifun noodles, cooked in hot oil
1 tbsp. sesame seeds
1/2 c. peanuts
1 tsp. dry mustard
4 tbsp. sugar
4 tsp. soy sauce
2 tbsp. sesame oil
1/2 c. salad oil
6 tbsp. rice vinegar

Toast sesame seeds by placing them in ungreased frying pan and cook over low heat, shaking pan frequently until seeds turn golden brown and begin to pop, about 2 minutes. Toss together in a large bowl, lettuce, chicken breasts, maifun noodles, sesame seeds and peanuts.

In small bowl, blend sauce together by adding dry mustard, sugar, soy sauce, sesame oil, salad oil and rice vinegar. Combine sauce with lettuce.
