CHINESE CHICKEN SALAD 
2 to 3 c. cooked chicken, cut into bite-size pieces
1/2 c. oil
1/4 c. cider vinegar
2 tbsp. soy sauce
1 tbsp. honey
1 garlic clove, minced
1 tomato, seeded and diced
1 c. chopped celery
1 sm. can water chestnuts
1 c. green onion, sliced
Chinese noodles

Combine oil, cider vinegar, soy sauce, honey, and garlic. Mix well. In a medium bowl, pour marinade over chicken pieces. Cover and refrigerate several hours.

Just before serving, add tomato, celery, water chestnuts, and green onion to chicken. Toss well. Serve on lettuce beds, topped with Chinese noodles.
