GERMAN POTATO SALAD | |
5 lbs. red potatoes, cooked, peeled and sliced 1 1/2 lbs. bacon, chopped into 1 inch pieces 2 lg. onions, chopped 1 1/3 c. water 2 tbsp. flour 1 tsp. salt 1 1/2 c. celery, chopped 2/3 c. sugar 1/3 c. white vinegar 1/3 c. rice vinegar 1 tsp. dry mustard Brown onions and bacon. Add flour to thicken. Add water, sugar, vinegars, dry mustard and salt. Bring to a boil. Simmer vigorously for 15 minutes. Pour over sliced potatoes. Salt and pepper to taste. Add celery. Serve warm. Note: Sauce should be stirred constantly while simmering. |
