SHRIMP CASSEROLE 
1 c. chopped onions
1 c. chopped celery
1 or 2 jalapenos, chopped, seeded
3 cloves garlic, chopped
1 stick butter
1 can cheddar cheese soup
1 can cream of mushroom soup
1 sm. jar chopped pimiento
2 1/2 c. cooked shrimp, sliced or chopped
2 1/2 c. cooked rice
1 c. chopped green onions
1/3 c. chopped parsley
3/4 tsp. black pepper

Cook onions, peppers, garlic, celery in butter until tender. Add soup, parsley, green onions, shrimp and pimiento; mix. Stir in rice and seasoning. Put in casserole. Spread with Italian Progresso Crumbs. Bake about 30 minutes at 350 degrees.
