1 package yeast 1 cup warm water (110 degrees) 1/2 teaspoon salt 2 eggs, well beaten 4 tablespoons sugar 1 1/2 teaspoons cinnamon 5 tablespoons sugar 2 cups milk, warm 1/2 cup butter, melted 4 tablespoons butter flour, sufficient to make a stiff sponge batter Dissolve the yeast and add one tablespoon of the sugar and the salt and enough flour to stiffen to a sponge (about 3 cups more or less). Let rise for one hour, then add the rest of the ingredients, using enough sifted flour to make a soft sponge. Let rise again, then roll out dough on a floured board and cover with a mixture of 4 tablespoons sugar, 4 tablespoons butter and 1 1/2 tsp cinnamon. Roll up like a jelly roll and cut into 2 inch pieces. Place on well-greased baking sheets and let rise for a third time, then bake at 400F for 20 minutes. |
