“ELDERBERRY JAM” IS IN:

ELDERBERRY JAM 
1 lb. elderberries
3/4 lb. sugar

Remove stems from elderberries, then weigh them. Add the sugar, and cook until almost thick.

The mixture must not be too stiff. Pour into hot jars and seal.

Process in boiling water bath for 10 minutes.

Variation:

Strip ripe fruit from the stalks, and boil with a little water for 15 minutes, having taken care to weigh the fruit.

To 6 lbs. berries, allow 4 lbs. sugar. Boil for 15 minutes, then add 1 tablespoon of orange flower water and then boil for 45 minutes.

Seal in hot jars.
