ITALIAN SPINACH 
2 tbsp. olive oil
2 tbsp. butter
1 med. onion, slivered
1 clove garlic, minced and pressed (more to taste)
1/4 tsp. dry basil
1 med. tomato, peeled and chopped
1/4 c. dry white wine
1/2 tsp. salt
1/8 tsp. ground nutmeg
1/8 tsp. ground white pepper
2 bunches fresh spinach (about 1 1/2 lbs.)

In a large frying pan over medium heat place butter and oil. Add onion until soft and golden. Add garlic, basil, tomato, wine, salt, nutmeg and pepper. Cook and stir until thick (8-10 minutes). Add spinach. Continue to cook and stir until wilted and blended. Serve hot. 6-8 servings.
