ITALIAN SPINACH PASTA SALAD | |
1 (8 oz.) box spinach elbows 1 c. diced Genoa salami 1 1/2 c. chopped black olives 2 c. chopped celery 1/2 c. chopped onion 1 c. chopped red or green peppers 1 med. tomato, diced 1/2 c. olive oil 1/2 c. red wine vinegar 1 tbsp. salt 1/2 tsp. salt 1/2 tsp. pepper Substitute for salami si 1 cup of chopped ham, chicken, or cheese. Cook elbows as directed on box, cool in cold water and drain. Add all ingredients to elbows. Blend thoroughly and serve. |
