CORN CASSEROLE 
1 stick butter
4 hot peppers
10 oz. longhorn cheese, shredded
8 oz. sour cream
1 can cream style corn
1 box Jiffy cornbread mix
1 chopped onion
2 eggs
1 can whole corn

Brown onion in butter, mix Jiffy, sour cream, eggs, corn and cheese. Add peppers, onion and butter. Bake in large pan or 2 small ones at 350 degrees for 30 to 45 minutes. This freezes well.
