BEST BEET PICKLES 
2 c. sugar
2 c. vinegar
2 c. water
1 tbsp. salt

Scrub and cook beets until tender. Peel and quarter. Put them into sterilized jars. Boil syrup and fill jars. Seal and process in hot water for 15 minutes after they start to boil. Can also be used for buttered beets.
