CHOCOLATE MINT PATTIES 
3 2/3 c. (1 lb.) confectioners' sugar
1/4 c. cocoa
1/3 c. butter, softened
1/3 c. light corn syrup
1-2 tsp. peppermint extract

Sift together confectioners' sugar and cocoa; set aside. In large mixer bowl on medium speed beat butter, corn syrup and peppermint extract until well blended. Gradually beat in 1 to 2 cups cocoa mixture until well blended and smooth. With hands knead until mixture is well blended and smooth.

On wax paper pat or roll out to 1/4 inch thickness. With small cookie cutters, cut into desired shapes or using about 1 teaspoon of chocolate mixture for each, shape into balls; flatten into patties. Store in tightly covered container in cool place or in refrigerator. About 7 dozen patties.
