PUMPKIN MUFFINS | |
1/2 c. butter, softened 3/4 c. brown sugar 1/4 c. molasses 1 egg 1 c. pumpkin 1 3/4 c. flour 1 tsp. baking soda 1/4 tsp. salt 1/4 c. pecans, chopped Raisins, as desired Beat butter, sugar, and molasses. Blend in egg and pumpkin. Stir in flour, baking soda, and salt. Fold in pecans and raisins. Fill greased muffin cups half full. Bake at 375 degrees for 30 minutes. Makes 1 1/2 dozen. |
