CARROT MEDALLIONS 
2 lb. (Kilo) sliced carrots
1 green pepper, sliced in rings
2 onions, sliced in rings
1 can tomato soup
1/2 c. salad oil
1 c. sugar
3/4 c. white vinegar
1 tsp. prepared mustard
Salt & pepper to taste

Cook carrots and green pepper. Add the rest of ingredients and refrigerate until ready to serve.
