QUICK ZUCCHINI BREAD 
3 c. flour
1 1/4 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. cinnamon
1 c. oil
2 c. sugar
3 eggs
2 c. shredded zucchini
1/2 tsp. grated lemon rind
2 tsp. vanilla
1/2 c. chopped nuts or raisins

Sift together first 5 ingredients; set aside. Blend oil, sugar and eggs in mixing bowl. Drain shredded zucchini and add with vanilla to mixing bowl. Blend well. Stir in dry ingredients. Add nuts. Stir only to combine. Pour into 2 greased and floured loaf pans. Bake at 325 degrees for 60 minutes.
