SOUTHERN BLACK-EYED PEAS 
4 strips bacon, cooked crisp

Remove from pan and break into pieces.

In bacon fat, cook until tender:

1 c. chopped onion
1 c. chopped green pepper
1 c. chopped celery

To above mixture, add pre-cooked bacon and:

1 can of tomatoes
2 tbsp. sugar
1 lg. bay leave
1/2 tsp. basil
Salt and pepper to taste
