GREEK SALAD | |
1 lg. head Romaine lettuce, washed, drained & chilled 2 med. tomatoes, cut into 1/2" wedges 1 lg. cucumber, sliced 1/8" thick 6-8 radishes, thinly sliced 4 green onions, cut in 1/4" slices 6 oz. feta cheese, crumbled 1 can black olives, pitted 2 tbsp. finely chopped fresh mint 1/2 c. olive oil 3 tbsp. fresh lemon juice 2 tbsp. red wine vinegar 1 clove garlic, crushed 1 tsp. finely chopped oregano Tear lettuce into bite-sized pieces. Add tomatoes, cucumbers, radishes, green onions, cheese and olives. Sprinkle with mint. Blend remaining ingredients with wire whisk. Pour over salad, toss. |
