STUFFED PEPPERS | |
1 lb. ground beef 1 onion, chopped 1/2 c. cooked rice 6 good-size green peppers 1/2 tbsp. garlic powder 1 can tomato soup 1/2 c. cooked corn 2 c. shredded cheddar cheese Brown onions, then add in and brown ground beef. Drain. Add in corn, rice and tomato soup and mix and heat through. Add in 1 cup shredded cheese and cook on medium heat, stirring occasionally for approximately 5 to 10 minutes. While that is cooking, parboil for 5 minutes the green peppers. Drain and place in a pan big enough to fit all the peppers. When the ground beef mixture is done, fill each pepper. Top with remaining cup of shredded cheese. Cook in oven at 350 degrees for approximately 30 minutes. |
